Recipe: Tomato Basil Couscous
Ingredients
- 10-ounce package of whole wheat couscous
- 2 cups vegetable broth
- 4 ripe tomatoes, diced
- 2 cloves of garlic, minced
- 1/2 cup feta cheese
- Sliced fresh basil or dried basil, to taste
- Dried oregano, to taste
- Salt and pepper, to taste
Instructions
- Cook the whole wheat couscous according to package instructions using vegetable broth instead of water.
- About 3 minutes before it is done on the stove, add in the garlic, basil and oregano and stir in completely.
- Once done cooking, remove from the heat and toss in the diced tomatoes and feta cheese. Salt and pepper to taste.
Variations
Can skip the feta cheese to make it vegan.
